Even when fish don't bite, no need to go to hungry.  Here is our mock crab cakes, they also make a great appetizer for those good fish days.

MOCK CRAB CAKES

 

Combine zucchini, bread crumbs, egg, mayo and Old Bay Seasoning in large mixing bowl.  Mix well.  Form into patties. Heat 1 tablespoon butter and 1 tablespoon oil in frying pan until sizzling.  Add Patties and fry on medium heat.  Turning half way through.  Cook till golden brown on both sides.

Fluke Pockets

  • Vegetable oil spray

  • 4 Fluke Fillets

  • 6 tbsp chopped herbs ( mix dill, parsley, thyme, basil and chives)

  • Herbs example is you enjoy herbs similar to them mix them in! Don't Like some?

  • Leave Them out!

  • 2 Lemons

  • 1 small onion

  • salt and pepper

Preheat the oven to 375 degrees.  Cut aluminum foil, big enough to rap fish. Spray them with oil. Slice onion thin. If using fresh herbs dice into small pieces. Squeeze Lemons and peel.  Grind peel in food processor on high. (rinds optional will give a fuller flavor to fish) Put fish flat on the greased foil. Sprinkle Herbs, onion, lemon juice and dash salt and pepper-to taste. Fold foil securely around fish. Place on a cookie sheet.


Bake the packets in the oven for about 15 min.  Time may vary depending one fish thickness. When finished fluke will become milky white and flakey

 

Mexican" Fish Burritos

Ingredients: 8 flour tortillas

vegetable oil spray

1 onion

4 fish fillets  Your favorite fish example: Porgy, sea bass, fluke ext.

1 packet taco seasoning

Preheat oven to 300 degrees. Wrap tortillas in aluminum foil for about ten minutes to get them soft.  While the tortillas are cooking, Chop onion finely. Slice fish into even strips if fillet is thick fillet it once more down the center Dice tomatoes into small chunks. Spray a large non-stick frying pan with oil.   Add onion and cook for until tender (about 5 min)   Add fish stirring occasionally, cook for 5 min.  Stir in taco seasoning.

4 tomatoes

Up heat on oven to 350 degrees. Place tortillas on oven proof dish fill with fish, onions, tomatoes.  Fold tortillas into wraps. Cover and cook for 20 min. Feel free to experiments with fixing's to satisfy taste: sour cream, salsa, cheese or even some hot peppers may do the trick.

 

Herb Crusted Stripped Bass

3 lbs stripped bass fillets

Ingredients: 2 cups unseasoned bread crumbs

3 table spoon lemon juice

1 table spoon pesto sauce

2 table spoon chopped parsley

vegetable oil spray

Preheat oven to 350 degrees.  Line pan with aluminum foil. Spray with cooking spray.  Mix mayo with horseradish to taste. Spread a 1/4 inch layer of sauce on blue fish fillets. Sprinkle bread crumbs on top and cook till golden brown.  Also great with Stripped Bass.

 

Put the bread crumbs, 2 tablespoons of the lemon juice, pesto sauce, parsley and pepper in a bowl and mix well together. Line a broiler pan with aluminum foil and spray with vegetable oil. Place fillets on the foil and sprinkle remaining tablespoon full of lemon juice and more salt and pepper.  Cook under a preheated broiler for 5 min. Turn the fillets over and spread the herb and bread crumbs mixture over the top of each.  Cook for a further 5-10 minutes, or until the bass is tender and the crust is golden brown.


Blue fish with mayonnaise and horse radish sauce

 

4 blue fish fillets

2 1/2 cups mayo

horse radish sauce

vegetable oil spray

2 cups seasoned bread crumbs
